- 1/2 large head of white cabbage, shaved finely
- 1/2 honey crisp apple, or your favorite apple
- 3 stems green onion, green part chopped finely
- 3 tbsp dill, finely chopped
Dressing
- 2 1/2 tbsp olive oil or sunflower-seed oil
- 1 tsp white vinegar
- 3/4 tsp sea salt, or more to taste
Instructions
- Prepare the dressing: In a large bowl, combine the olive oil or sunflower-seed oil, white vinegar, and sea salt. Stir well until the salt dissolves and the dressing is emulsified.
- Prepare the vegetables and fruit: Finely shave the white cabbage using a sharp knife or mandoline for thin slices. Cut the honey crisp apple into thin matchsticks or smaller chunks. Chop the green onion (green parts only) and dill finely.
- Assemble the slaw: Add the shaved cabbage, apple, chopped green onion, and dill into the bowl with the dressing. Toss everything thoroughly to coat the slaw evenly with the dressing.
- Serve or store: Toss well just before eating to keep the ingredients crisp. You can make this salad ahead by keeping the dressing at the bottom and adding the cabbage and other ingredients on top, then tossing just before serving. This also makes a convenient salad to take in a jar for picnics or lunches.
Notes
- Use honey crisp apples or any crisp, tart apple for best texture and flavor contrast.
