Instructions

  1. Step 1: Prepare the artichokes by cutting off the stalks and slicing about 1 inch from the tip. Peel the bottom two rows of leaves. Use scissors to trim the sharp ends from remaining leaves, cutting about ¾ to 1 inch off each leaf.
  2. Step 2: Pour water into the Instant Pot and add sliced lemon, smashed garlic cloves, and bay leaves. Insert the steamer rack and place artichokes stem side up on it. It’s fine to stack if cooking more than two.
  3. Step 3: Close the lid, set the valve to sealing, and pressure cook on high for 10 minutes. When cooking time is done, press cancel and carefully manually release the pressure.
  4. Step 4: Remove artichokes with tongs. You can serve them whole or sliced in half for easier eating.
