  2. Step 2: Finely chop the rosemary and thyme leaves and combine them with the garlic granules in a small bowl. Drizzle in the vegetable oil and season with plenty of salt and pepper.
  3. Step 3: Preheat the air fryer to 200°C. Transfer the potatoes to a tray and gently press each one down using the bottom of a glass or ramekin until flattened but still whole.
  4. Step 4: Drizzle the herby oil mixture over the potatoes and use a pastry brush to coat them evenly. Place the potatoes in a single layer in the air fryer basket. You may need to cook in batches to fit them properly.
