  2. Char the onion: Spread the oiled onion slices evenly over a baking tray. Place the tray under a preheated grill on high heat and cook for 6-8 minutes until the onions are nicely charred and blackened on the edges, stirring once if needed for even charring. Remove and allow to cool completely.
  3. Mix the dip: Once cooled, chop the charred onions roughly, then combine them in a bowl with 150ml soured cream and 50g mayonnaise. Mix thoroughly until well incorporated.
  4. Season and chill: Season the dip to taste with salt and pepper, then cover and chill in the refrigerator until ready to serve, allowing the flavors to meld.
