Description
Delicious homemade apple turnovers featuring a sweet and spiced Bramley and Gala apple compote encased in golden, flaky puff pastry. Perfectly baked until puffed and golden, these turnovers are an ideal warm dessert or snack enjoyed with vanilla ice cream or on their own.

Apple Filling
- 2 medium-large Bramley apples, peeled, cored and roughly chopped
- 50g golden caster sugar
- ½ tsp ground cinnamon
- 1 tbsp butter
- 1 Gala or sweet dessert apple, peeled, cored and cut into 1cm dice
Pastry & Finishing
- 320g pack Jus-Rol™ Puff Pastry Sheet
- 2 tbsp milk (for glazing)
- 2 tsp demerara sugar (for sprinkling)
Instructions
- Prepare the apple compote: Place the Bramley apples, golden caster sugar, and ground cinnamon in a small pan with 1 tablespoon of water. Cover with a lid and simmer gently over low heat for 10-15 minutes until the apples break down into a thick compote.
- Add butter and Gala apple: Stir in 1 tablespoon of butter and the diced Gala apple pieces. Continue cooking uncovered for another 5 minutes until the Gala apples are just soft but still holding their shape, and any excess moisture has evaporated. Remove from heat and allow to cool completely.
- Preheat the oven: Heat the oven to 220°C (200°C fan) or gas mark 7. Line a baking sheet with parchment paper.
- Prepare the pastry: Unroll the puff pastry sheet on a clean work surface. Cut into 4 equal rectangles.
- Assemble the turnovers: Spoon the cooled apple filling onto one half of each pastry rectangle, leaving a 1cm border around the edges. Brush the edges with milk to help seal.
- Seal and glaze: Fold the empty side of the pastry over the filling, pressing and crimping the edges to seal. Brush the tops with milk, sprinkle with demerara sugar, and cut a small steam hole in the center of each turnover.
- Bake: Transfer the turnovers to the lined baking sheet and bake in the preheated oven for 20-25 minutes until golden, puffed, and cooked through.
- Cool and serve: Allow the turnovers to cool on a wire rack for 10 minutes before serving. The filling will be molten hot initially. Serve warm with vanilla ice cream or at room temperature. Store leftovers in an airtight container for up to 2 days.
Notes
- Use Bramley apples for a tart, soft filling, balanced by the sweetness and texture of Gala apples.
- Ensure the filling is cooled before assembling to prevent the pastry from becoming soggy.
- Brush with milk for a golden glaze, and sprinkle demerara sugar for added crunch and sweetness.
- Make a small steam hole on each turnover to release steam and avoid soggy pastry.
- Store turnovers in an airtight container and consume within 2 days for best freshness.
