  • 1 banana shallot, finely chopped
  • 1 tbsp strong horseradish sauce

  • 4 burger buns, split
  • Iceberg lettuce leaves, to serve

Instructions

  1. Prepare the Burger Mixture: Tip the beef mince, finely chopped banana shallot, horseradish sauce, dried mixed herbs, and grated garlic into a bowl. Season generously with salt and black pepper. Mix thoroughly by squeezing the mixture with your hands to ensure it binds well.
  2. Form Patties and Add Cheese: Divide the mixture into four equal portions. Shape each portion into a thick 3cm patty. If using blue cheese, press a small 50p-sized piece into the center of each patty and pack the meat tightly around it so the cheese is fully enclosed, allowing it to melt while cooking.
  3. Chill the Patties: Place the formed burgers on a plate, cover with cling film, and chill in the refrigerator for at least 30 minutes or overnight to help them firm up.
  4. Preheat the Grill or Barbecue: Light the barbecue and wait until the coals are ashen, or heat a gas barbecue to medium heat. Alternatively, preheat a frying pan over medium heat.
  5. Cook the Burgers: Lightly brush the burgers all over with vegetable oil. Place on the barbecue grill or frying pan and cook for approximately 5 minutes until the patties start to char. Carefully flip them over and cook for another 4-5 minutes for medium doneness, or longer if you prefer well done. For safety, the internal temperature should reach 70°C. Remove the burgers and let them rest for a few minutes.
  6. Assemble and Serve: Place the rested burgers in the split buns. Top with iceberg lettuce leaves, fresh tomato slices, and a generous spoonful of relish or your choice of accompaniments for a delicious meal.
