Ingredients
Scale
Marinade and Chicken
- 2 limes, juiced (plus wedges to serve)
- 1 tsp dried oregano
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1 tsp olive oil
- 2 garlic cloves, crushed or finely grated
- 4 chicken breasts, diced
Vegetables
- 3 mixed coloured peppers, deseeded and cut into chunks
- 1 red onion, halved and cut into chunks
- 6 cherry tomatoes, halved
Guacamole
- 2 ripe avocados, stoned and peeled
- 1 lime, juiced
To Serve
- Warmed tortillas
- Chopped coriander
- Soured cream or yogurt
- Chilli sauce (optional for adults)
Instructions
- Make the marinade: In a large bowl, juice both limes. Add dried oregano, ground cumin, smoked paprika, olive oil, and crushed garlic, stirring well to combine. Dice the chicken breasts and add them to the marinade. Mix thoroughly to coat the chicken evenly and set aside for the flavors to infuse.
- Prepare the vegetables: Deseed the mixed peppers and halve the red onion yourself, then cut both into chunks suitable for skewering. Older children (around seven years or older) can safely help with cutting the vegetables using a child-friendly knife.
- Assemble the skewers: Carefully thread alternate pieces of marinated chicken, peppers, and onion onto skewers. For younger children, guide them to stab the ingredients and slide them up the skewers. Once assembled, place the skewers aside; they can be prepared several hours ahead and chilled until cooking.
- Prepare the guacamole: Stone and peel the avocados and place them in a bowl. Add the juice of one lime. Using a potato masher, mash the avocados and lime juice together until smooth and creamy. Transfer the guacamole to a serving dish.
- Cook the skewers: Heat a barbecue or griddle pan until hot. Cook the skewers for 10-12 minutes, turning regularly to ensure even cooking and that the chicken is cooked through. Older children (eight years and above) can help by turning the skewers with tongs under adult supervision.
- Serve: Serve the hot chicken fajita skewers on warmed tortillas alongside the guacamole, soured cream or yogurt, chopped coriander, lime wedges, and optional chilli sauce for those who enjoy some heat.
