  • 2 ounces Bell Pepper, chopped
  • 1 Mushroom, chopped
  • 1 Tomato, deseeded and diced
  • 1 handful Fresh Parsley, chopped

  • 2 ounces Bacon, diced
  • 2 ounces Cheese, shredded or chopped
  • 1 tablespoon Unsalted Butter (for greasing)

Instructions

  1. Prepare Eggs and Cream: Break the 3 large eggs into a large mixing bowl and add 4 tablespoons of cream. This mixture will provide a creamy base for your casserole.
  2. Prepare Vegetables: Deseed the tomato, rinse under tap water, pat dry with kitchen paper, then dice it. Dice the bacon as well. Chop the bell pepper, mushroom, and fresh parsley finely, then add all these to the bowl with the eggs.
  3. Add Cheese and Seasoning: Add 2 ounces of cheese to the bowl. Season the mixture with a pinch of ground black pepper, salt, and garlic powder.
  4. Mix Thoroughly: Stir the entire mixture well to evenly distribute all ingredients.
  5. Prepare Baking Dish: Grease a small baking dish with 1 tablespoon of unsalted butter to prevent sticking and add flavor.
  6. Bake the Casserole: Pour the egg and vegetable mixture into the greased baking dish. Place the dish into a preheated oven set to 400°F (200°C) and bake for 20 to 25 minutes, depending on the thickness of the casserole, until the eggs are set.
  7. Cool and Serve: Remove the casserole from the oven, let it cool for 5 minutes so the inside sets properly and it doesn’t stick to the sides. Cut into portions and serve hot for a hearty breakfast.
