Chicken and Marinade

  • 2 skinless chicken breasts, halved lengthways
  • 2 tsp olive oil
  • Juice of 1 lemon

Burger Assembly

  • 4 bread rolls, cut in half
  • 3 tbsp crème fraîche
  • 2 hard-boiled eggs, sliced
  • 1 Little Gem lettuce, chopped
  • 1 punnet of salad cress, snipped
  • 25g Parmesan, shaved

Instructions

  1. Prepare the Chicken: Heat a griddle pan over high heat until it is smoking hot. Place the chicken breasts between two sheets of baking parchment and gently bash with a rolling pin to flatten evenly.
  2. Season and Cook: Remove the parchment and brush both sides of the chicken pieces with olive oil. Place them on the griddle pan and cook for about 10 minutes, turning once, until cooked through.
  3. Rest and Flavor: Transfer the cooked chicken to a plate. Pour over a little of the lemon juice and season with salt and pepper to taste.
  4. Toast the Rolls: Place the bread rolls cut-side down on the griddle pan to lightly toast until golden and slightly crisp.
  5. Mix the Dressing: In a small bowl, combine the crème fraîche with the remaining lemon juice and stir well to create a tangy sauce.
  6. Assemble the Burgers: Layer the bottom halves of the toasted rolls with the grilled chicken pieces, sliced hard-boiled eggs, chopped Little Gem lettuce, a generous dollop of the crème fraîche mixture, salad cress, and shaved Parmesan. Top with the other half of the roll and serve immediately.

  • For a more intense lemon flavor, add some lemon zest to the crème fraîche mixture.
