These Cauliflower & Curried Mayo Burgers are a flavorful vegetarian alternative to classic burgers, featuring roasted curried cauliflower steaks topped with a tangy curried mayo, fresh tomato and onion salsa, and an optional crunchy bombay mix for added texture. Cauliflower Steaks:
- 1 small cauliflower
- 3 tbsp olive oil
- 2 tbsp medium curry powder
- Salt, to taste
Tomato & Onion Salsa:
- 2 large tomatoes, finely chopped
- 1 red onion, finely chopped
- ½ bunch of coriander, finely chopped
- Pinch of salt
Curried Mayo Sauce:
- 2 tbsp mayonnaise
- 3 tbsp Greek yogurt
- 2 tbsp curry paste
Additional:
- 4 burger buns
- 2 handfuls of bombay mix (optional)
Instructions
- Prepare Cauliflower Steaks: Preheat your oven to 200°C (180°C fan)/gas mark 6. Remove the leaves from the cauliflower and cut off the base, then slice the cauliflower into 2 cm-thick steaks for roasting.
- Make Curry Oil & Roast Cauliflower: In a small bowl, combine the olive oil and medium curry powder. Line a baking tray with foil and place the cauliflower steaks on it. Brush each steak generously on both sides with the curry oil and sprinkle with salt. Roast in the oven for 25-30 minutes until the cauliflower is tender and slightly golden.
- Prepare Tomato & Onion Salsa: In a separate bowl, mix together the finely chopped tomatoes, red onion, coriander, and a pinch of salt. This fresh salsa will add brightness and crunch to the burgers.
- Mix Curried Mayo Sauce: In another bowl, combine mayonnaise, Greek yogurt, and curry paste until smooth and well blended. This sauce will add creamy spiced flavor to the burgers.
- Toast Burger Buns: Slice the burger buns and toast them cut-side down in a dry frying pan until lightly browned and warm.
- Assemble Burgers: Spread a dollop of curried mayo on the base bun, place a cauliflower steak on top, add another dollop of curried mayo, then spoon over some tomato and onion salsa. Sprinkle with bombay mix if using, and top with the bun lid. Serve immediately for the best texture and flavor.
