Delicious and flavorful cauliflower burgers featuring curried mayo, roasted cauliflower steaks, and a fresh tomato-onion coriander topping. These vegetarian burgers combine aromatic spices, creamy curried yogurt mayo, and optional crunchy Bombay mix for a satisfying meat-free meal.

Cauliflower and Roasting

  • 1 small cauliflower
  • 3 tbsp olive oil
  • 2 tbsp medium curry powder
  • Salt, to taste

Tomato and Onion Topping

  • 2 large tomatoes, finely chopped
  • 1 red onion, finely chopped
  • ½ bunch of coriander, finely chopped
  • Pinch of salt

Curried Mayo

  • 2 tbsp mayonnaise
  • 3 tbsp Greek yogurt
  • 2 tbsp curry paste

Assembly

  • 4 burger buns
  • 2 handfuls of Bombay mix (optional)

Instructions

  1. Prepare the oven and cauliflower: Preheat your oven to 200°C (180°C fan/gas mark 6). Remove the leaves from the cauliflower and cut off the base. Slice the cauliflower into 2 cm-thick steaks carefully to keep them intact.
  2. Season and roast the cauliflower steaks: In a small bowl, combine the olive oil with medium curry powder. Line a baking tray with foil and place the cauliflower steaks on it. Generously brush both sides of each steak with the curry oil mixture and sprinkle with salt. Roast in the oven for 25-30 minutes until the cauliflower is tender and slightly caramelized.
  3. Make the tomato and onion topping: In a bowl, mix the finely chopped tomatoes, red onion, coriander, and a pinch of salt. Set aside to let the flavors meld.
  4. Prepare the curried mayonnaise: In another bowl, combine the mayonnaise, Greek yogurt, and curry paste thoroughly until smooth and well blended.
  5. Toast the burger buns: Cut the burger buns in half and toast them cut-side down in a dry frying pan until golden and slightly crisp.
  6. Assemble the burgers: Spread a dollop of the curried mayo on the base of each toasted bun. Place a roasted cauliflower steak on top, add more curried mayo, then a generous spoonful of the tomato and onion mixture. If using, sprinkle some Bombay mix over the top for added crunch. Finish with the top bun and serve immediately.

Notes

  • You can substitute Greek yogurt with a plant-based yogurt for a vegan version, replacing mayonnaise with vegan mayo.
  • Bombay mix adds a crunchy texture but can be omitted for a gluten-free option if you find a suitable mix.
  • The curry paste and medium curry powder levels can be adjusted according to your spice preference.
  • Use fresh coriander or substitute with parsley if preferred.
  • For an extra flavor boost, drizzle some lemon juice over the tomato topping before assembly.
