- 2–3 large handfuls fresh spinach
- 80g cheddar cheese, grated or sliced
Instructions
- Preheat the oven: Heat your oven to 200°C (180°C fan) or gas mark 6 to ensure it’s properly warmed for baking the pinwheels.
- Prepare the pastry: Unroll the sheet of ready-rolled light puff pastry with the longer side facing you, creating a wide rectangular surface to work on.
- Spread Marmite: Evenly spread 1 tablespoon of Marmite over the entire surface of the pastry, ensuring full coverage for that distinctive savory flavor.
- Add spinach and cheese: Tear 2-3 large handfuls of fresh spinach and scatter it over the Marmite layer. Then sprinkle 80g of cheddar cheese evenly on top, making sure the filling is well distributed.
- Roll the pastry: Starting from the longer edge closest to you, tightly roll the pastry away from you into a long sausage shape, firm enough to hold together but not squished.
- Cut into pinwheels: Using a sharp knife, cut the rolled sausage into 12 equal pieces, each forming a neat spiral.
- Arrange for baking: Place the pinwheels spiral side up on two baking trays lined with baking parchment. Press each pinwheel down slightly with your hand to flatten them a little for even baking.
- Optional freezing: At this stage, you can cover and freeze the pinwheels if you want to bake them later. When ready to bake from frozen, add extra time as noted.
- Bake: Bake the pinwheels in the preheated oven for 15-20 minutes if fresh, or about 25 minutes if baking from frozen, until puffed up and golden brown.
- Serve: Remove from the oven and let them cool slightly before serving as a tasty snack or appetizer.

- The spinach can be fresh or lightly wilted if preferred, but fresh works best for texture.
- For a stronger cheesy flavor, you may substitute mature cheddar or add an extra 20g of cheese.
- The Marmite can be adjusted to taste; less or more depending on your preference for its salty, umami flavor.
- If freezing, freeze the pinwheels on the trays first before transferring to a freezer-safe container to maintain shape.
