- 2 (10 oz.) cans Rotel diced tomatoes (drained very well)
- Cilantro (for topping, optional)
- Green onions (for topping, optional)
- Red onions (for topping, optional)
- Tomatoes (for topping, optional)
- Jalapeno peppers (for topping, optional)
Cheese
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese (or pepper jack)
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the dip.
- Mix Cream Cheese Layer: In a medium bowl, combine the softened cream cheese and sour cream until smooth. Stir in 1 tablespoon of taco seasoning evenly to infuse flavor.
- Spread Cream Cheese Mixture: Spread the seasoned cream cheese and sour cream mixture evenly on the bottom of a 9 x 13-inch baking dish to form the base layer.
- Prepare Refried Beans Layer: In the same bowl, mix the refried beans with the remaining 1 tablespoon of taco seasoning thoroughly. Spread this mixture evenly over the cream cheese layer.
- Add Tomatoes Layer: Drain the diced tomatoes very well using paper towels to remove excess moisture, then spread them evenly on top of the bean layer.
- Top with Cheese: Combine the shredded cheddar and Monterey Jack cheeses and spread them evenly over the tomato layer in the dish.
- Bake Covered: Cover the baking dish with foil and bake for 20 minutes to heat thoroughly and melt the cheese.
- Bake Uncovered: Remove the foil and bake for an additional 5 minutes or until the cheese is fully melted and bubbly.
- Add Toppings: Remove the baked dip from the oven and add any desired fresh toppings such as cilantro, green onions, red onions, tomatoes, and jalapeno peppers for extra flavor and texture.
- Serve: Serve the warm bean dip with tortilla chips for dipping and enjoy immediately.
