These Cheesy Omelette Burgers offer a delicious twist on traditional burgers by using fluffy, pea-studded omelettes topped with mature cheddar cheese and served in toasted burger buns. Perfect for a quick and satisfying meal, they combine the comfort of eggs and cheese with the freshness of salad leaves and optional sweet potato wedges on the side.

Omelette
- 1 tbsp olive or rapeseed oil
- 8 large eggs, beaten
- 200g frozen peas
- 85g mature cheddar, grated
Burgers
- 4 large burger buns, toasted
- 4 tbsp onion chutney or chilli jam
- Handful salad leaves (rocket recommended)
- Slices of tomato (optional)
- Sweet potato wedges (optional)
Instructions
- Heat the oil and start cooking the eggs: Heat 1 tablespoon of olive or rapeseed oil in a frying pan approximately 20cm wide over medium heat. Season the beaten eggs with salt and pepper, then pour into the pan. Add 200g of frozen peas and quickly mix them in.
- Cook the omelette: Allow the eggs and peas to cook over low to medium heat, without stirring, for about 8 minutes until the underside is set and just turning golden brown.
- Add cheese and grill: Sprinkle 85g of grated mature cheddar evenly over the omelette. Place the pan under a preheated grill on high heat for 3 minutes, or until the cheese is bubbling and the surface of the omelette is set.
- Prepare the buns: While the omelette cooks, spread 4 tablespoons of onion chutney or chilli jam over the toasted burger buns.
- Assemble the burgers: Cut the cheesy omelette into 4 equal wedges and place each wedge onto the bottom half of a bun. Top with a handful of salad leaves (rocket is recommended) and a few slices of tomato if using, then cover with the top half of the bun.
- Serve: Serve the omelette burgers immediately with sweet potato wedges on the side if desired for a complete meal.
Notes
- You can swap frozen peas for fresh peas if in season for a sweeter flavor.
- Adjust the amount of chutney or chilli jam to suit your taste preference.
- Sweet potato wedges are optional but add a wonderful side that complements the burger well.
- Use a non-stick frying pan to prevent the omelette from sticking.
- Keep the heat low to medium while cooking the omelette to avoid burning the eggs.
