  • 175g canned chickpeas, drained and rinsed

  • 275g Brussels sprouts, shredded
  • 50g feta
  • ½ small bunch coriander, roughly chopped

Instructions

  1. Step 1: Heat 1 tbsp of coconut oil in a large flameproof casserole dish over medium heat. Once hot, add the sliced onion, red pepper, and chopped garlic. Cook for 3–4 minutes, stirring regularly, until they just start to soften.
  2. Step 2: Increase the heat to high and add the chicken thighs. Fry everything together for about 3 minutes, stirring occasionally to brown the chicken evenly.
  3. Step 3: Sprinkle in the ground cinnamon, turmeric, and smoked paprika. Add the tomato purée and fry, stirring almost constantly, for 1 minute to release the spices’ flavors.
  4. Step 4: Pour in the chicken stock and bring to a boil. Then reduce the heat to a simmer and partially cover with a lid. Let it cook gently for 30 minutes.
