Instructions

  1. Soak the dried fruits: Combine 1 cup raisins and 1/2 cup dried apricot in a small bowl. Add enough water to cover the fruits completely and let them stand for 10 minutes or until they become plump.
  2. Drain and dry: Drain the soaked fruits thoroughly and pat them dry to remove excess moisture.
  3. Process mixture: Place the soaked and dried fruits into a food processor. Add 3/4 cup granola, 1/2 cup sliced almonds, and 1/2 teaspoon almond extract. Pulse the mixture until it is finely chopped and starts to stick together.
  4. Add coconut flakes: Transfer the mixture to a bowl and gently stir in 3/4 cup sweetened coconut flakes to combine evenly.
  5. Form the bites: With slightly moistened hands, roll about 1 tablespoon of the mixture into 1-inch balls. Place each on paper cups or a tray.
  6. Garnish and chill: Optionally, garnish the top of each bite with additional coconut flakes. Cover the bites and refrigerate for 2 hours to allow the flavors to meld and for the bites to firm up.

Notes

  • If mixture feels too dry to form balls, add a small amount of water, one teaspoon at a time, to help binding.

  • For a nut-free version, substitute sliced almonds with pumpkin seeds or omit completely.
