- 2 medium onions, roughly chopped
- 1 garlic clove, crushed
- 500g mushrooms, finely chopped (chestnut or button mushrooms work well)
- 750ml chicken stock
- 4 tbsp single cream, plus more to serve
- Small handful flat-leaf parsley, roughly chopped, to serve (optional)
Instructions
- Prepare Ingredients: Roughly chop two medium onions and finely chop 500g of mushrooms, either chestnut or button mushrooms are suitable. Crush one garlic clove to release its flavor.
- Add to Soup Maker: Place the chopped onions, crushed garlic, mushrooms, and 750ml of chicken stock into the soup maker. Ensure the level does not exceed the maximum fill line.
- Cook the Soup: Select and activate the ‘smooth soup’ function on the soup maker. Allow the machine to complete its cooking and blending cycle automatically.
- Season and Add Cream: Once the cycle finishes, open the soup maker and season the soup well with salt and pepper. Stir in 4 tablespoons of single cream to enrich the soup’s texture.
- Final Blend and Serve: Blend the soup briefly again in the soup maker until it achieves a creamy consistency. Pour into bowls and optionally top with extra cream and chopped flat-leaf parsley for garnish before serving.
Notes
- Do not overfill the soup maker beyond the max fill line to ensure safe operation.
- Choose mushrooms based on preference; chestnut mushrooms add a nuttier flavor while button mushrooms offer a classic taste.
- For a vegan version, substitute the chicken stock with vegetable stock and use a plant-based cream alternative.
