Noodle Salad

  • 100g rice noodles
  • 2 small carrots, cut into thin matchsticks
  • 2 spring onions, thinly sliced
  • Small handful each coriander and mint, chopped
  • 140g cooked prawns in chilli, lime and coriander (we used Waitrose)

Dressing

  • 2 tsp reduced-salt soy sauce
  • 1 tsp fish sauce
  • 2 tsp light soft brown sugar
  • Zest and juice of 1 lime

Instructions

  1. Prepare the Noodles: Soak the rice noodles in boiling water according to the package instructions until they are soft. Drain the noodles and rinse them under cold running water to stop the cooking process and cool them down. Drain well to remove excess water.
  2. Mix the Salad Ingredients: In a large bowl, combine the drained noodles with matchstick carrots, thinly sliced spring onions, chopped coriander and mint, and the cooked prawns with chilli, lime, and coriander.
  3. Make the Dressing: In a small bowl, whisk together the reduced-salt soy sauce, fish sauce, light soft brown sugar, and the zest and juice of one lime until the sugar is dissolved and the mixture is well combined.
  4. Combine and Toss: Pour the dressing over the noodle and prawn mixture. Toss everything thoroughly to ensure all ingredients are evenly coated with the flavorful dressing.
  5. Serve or Store: Serve the salad immediately for the freshest taste or store it in airtight containers in the refrigerator until ready to eat.
