- Stuff with avocado and peppers: Insert thin slices of avocado and both red and orange bell pepper slices inside the cucumber tubes. Then add more rice to fill any gaps, compressing gently to pack the filling fully without damaging the cucumber or soft avocado.
- Slice into sushi rolls: Using a sharp knife, cut the stuffed cucumber tubes into 1-inch thick pieces. If the filling loosens while slicing, press in extra rice or peppers as needed to maintain a compact roll.
- Make spicy mayo sauce: Mix the light mayonnaise with sriracha until well combined, creating a creamy and spicy dipping sauce.
