Instructions
- Preheat and melt butter: Preheat your oven to 375°F (190°C). Place the cubed butter in a 9×13 inch baking dish or an oval baking dish of similar size and put it in the oven to melt for about 10 minutes.
- Prepare batter: While the butter melts, combine 1 cup plus 2 tablespoons of the flour, baking powder, ground ginger, cinnamon, and salt in a mixing bowl. Add in the milk, 1 cup brown sugar, molasses, and vanilla extract. Stir together until the batter is smooth and well combined.
- Prepare blueberries: In a separate bowl, toss the blueberries with the remaining 1/4 cup brown sugar and 2 tablespoons flour. This coating prevents the blueberries from sinking and helps thicken their juices.
- Assemble the cobbler: Remove the baking dish with melted butter from the oven carefully. Pour the prepared batter evenly over the hot melted butter. Then spoon the blueberry mixture evenly over the batter without stirring.
- Bake the cobbler: Place the dish back in the oven and bake for 50-55 minutes. The cobbler is ready when the center is just set and the edges are beginning to brown.
