- Prepare the Filling: Sprinkle 1 cup of shredded cheddar cheese evenly over one flour tortilla, leaving a half-inch border free from cheese. Then evenly distribute the finely chopped green chili pepper and onion on top of the cheese.
- Assemble the Quesadilla: Place the second flour tortilla on top of the layered ingredients, creating a sandwich with the cheese and vegetables inside.
- Heat the Pan and Melt Butter: On the stovetop, melt 1 tablespoon of butter in a pan over medium-low heat, making sure it coats the surface evenly to prevent sticking.
- Cook the Quesadilla – First Side: Place the assembled quesadilla onto the melted butter in the pan. Add the remaining 1 tablespoon of butter on top of the quesadilla. As the butter softens, spread it over the top tortilla to ensure a crispy, buttery crust. Cook for several minutes on low heat until the bottom side is golden brown and the cheese inside is mostly melted.
- Flip and Cook the Other Side: Carefully flip the quesadilla over using a spatula. Continue cooking on low heat until the second side is golden brown and the cheese is fully melted inside, making sure the quesadilla is heated through evenly.
