Ingredients

Scale

Lo Mein Sauce

  • ½ cup chicken stock
  • 2 tablespoons oyster sauce
  • 1 ½ tablespoons dark soy sauce (or regular soy sauce)
  • 1 ½ tablespoons low sodium soy sauce
  • 1 teaspoon cornstarch
  • 1 teaspoon toasted sesame oil
  • 1 teaspoon brown sugar
  • 1 teaspoon ginger, grated
  • 3 cloves garlic, minced

Main Ingredients

  • 10 ounces Chinese egg noodles, cooked according to package instructions
  • 1 pound chicken thighs or breast, cut into bite-size pieces
  • 2 tablespoons avocado oil
  • 2 carrots, julienned into 2-inch pieces
  • 1 ½ cups broccoli florets, cut into 2-inch pieces
  • 2 stalks green onions, finely chopped
  • 4 cloves garlic, minced
  • 1 teaspoon sesame seeds

Instructions

  1. Make the Lo Mein Sauce: In a bowl, combine chicken stock, oyster sauce, dark soy sauce, low sodium soy sauce, cornstarch, toasted sesame oil, brown sugar, grated ginger, and minced garlic. Stir thoroughly until the sugar has dissolved. Set the sauce aside.
  2. Marinate the Chicken: Toss the bite-size chicken pieces with 1 tablespoon of the prepared lo mein sauce and let it marinate while you prepare the vegetables. This ensures the chicken absorbs the flavors.
  3. Prepare the Vegetables: Julienne the carrots into 2-inch pieces, cut broccoli florets into 2-inch pieces, finely chop the green onions, and mince the garlic. Having all veggies prepped will help with quick stir-frying.
  4. Cook the Noodles: Follow the package instructions to cook the Chinese egg noodles until just tender. Drain and set the noodles aside for later use.
  5. Stir Fry the Chicken and Vegetables: Heat a wok or large deep pan over medium-high heat and add 1 tablespoon of avocado oil. Add the marinated chicken and stir-fry for 2-3 minutes until fully cooked, stirring occasionally. Remove the chicken and set it aside. Add the remaining 1 tablespoon of oil to the pan, then add the carrots and broccoli. Stir-fry the vegetables for 2-3 minutes, then add the minced garlic and cook for an additional 30 seconds until fragrant.
  6. Assemble the Lo Mein: Add the cooked noodles and the remaining lo mein sauce to the pan with the vegetables. Toss everything together for a few minutes to ensure the noodles are coated and heated through. Return the cooked chicken to the pan and toss to combine all ingredients well. Remove from heat.
  7. Garnish and Serve: Sprinkle the finely chopped green onions and sesame seeds over the assembled lo mein. Serve immediately and enjoy your delicious homemade chicken lo mein.

Notes

  • You can substitute chicken thighs with chicken breast if you prefer leaner meat.
  • Adjust the soy sauce quantity to your preferred saltiness and consider using low sodium soy sauce for a healthier option.
  • Feel free to add other vegetables such as bell peppers, snap peas, or mushrooms for variety.
  • Ensure not to overcook the noodles; they should be slightly firm to retain texture after stir-frying.
  • If you don’t have a wok, a large deep skillet works well for stir-frying.
