Instructions

  1. Prepare the ingredients: Chop the onion and large carrot into small pieces. Roughly chop the thyme leaves. Ensure the leftover roast chicken is shredded and skin removed.
  2. Load the soup maker: Add the chopped onion, carrot, thyme, frozen peas, and chicken stock into the soup maker. Be careful not to fill above the maximum fill line to avoid overflow during cooking.
  3. Cook the soup: Select the ‘chunky soup’ function on the soup maker and start the cycle. This setting will gently cook and blend the ingredients while keeping some texture.
  4. Add shredded chicken: Once the soup maker cycle is complete, open the lid and stir in the shredded roast chicken. Close the lid and allow the soup to warm through for a few minutes.
  5. Prepare the yogurt dressing: While the soup warms, mix the Greek yogurt, crushed garlic, and a squeeze of lemon juice in a small bowl until smooth. Season with salt and pepper to taste.
