Instructions
- Prepare Ingredients: Finely chop the carrots and slice the leek to ensure even cooking and optimal texture for the soup.
- Add to Soup Maker: Pour 750ml of vegetable or ham stock into the soup maker, then add the red lentils, chopped carrots, and sliced leek. Ensure the ingredients do not exceed the maximum fill line indicated in the soup maker.
- Start Cooking: Select the ‘chunky soup’ function on the soup maker and start the cooking cycle. The soup may appear foamy initially, but this will dissipate as cooking progresses.
- Check Lentils: Once the cycle completes, open the soup maker and check that the lentils are tender and fully cooked. If needed, you can cook it a bit longer to soften the lentils more.
- Season and Serve: Season the soup well with salt and pepper to taste, then sprinkle the chopped parsley over the top as a fresh garnish. Serve hot.
