A flavorful and quick Asian-inspired dish featuring lean minced beef cooked with aromatic five-spice powder and garlic, tossed with tender sugar snap peas and egg noodles. Finished with a splash of soy sauce and sesame oil, this meal is perfect for a satisfying weeknight dinner.

  • 250g lean minced beef
  • 225g pack mangetout or sugar snap peas
  • thumb-sized piece ginger, finely grated
  • 3 garlic cloves, finely grated
  • red chilli, deseeded and shredded to serve (optional)

Carbohydrates

  • 3 nests medium egg noodles

Spices and Sauces

  • 1 heaped tsp five-spice powder
  • ¼ tsp chilli powder
  • 400ml beef stock
  • 3 tbsp light soy sauce, or more to taste
  • sesame oil, to serve

Instructions

  1. Brown the Beef: Heat a large non-stick frying pan or wok over medium-high heat. Add the lean minced beef without any oil and cook for about 10 minutes, stirring occasionally, until the beef is very well browned.
  2. Cook the Noodles: While the beef is cooking, bring a pot of water to a boil and cook the egg noodles according to the package instructions. Once cooked, drain and set aside.
  3. Add Aromatics and Vegetables: To the browned beef, add the finely grated ginger, garlic, five-spice powder, chilli powder, and the mangetout or sugar snap peas. Stir-fry for a few minutes until the mixture is fragrant and the peas turn bright green.
  4. Simmer with Stock and Noodles: Splash in the beef stock to deglaze the pan, then add the drained noodles. Stir well to combine all ingredients and allow the liquid to reduce slightly for about 2-3 minutes.
  5. Season and Serve: Season the dish with light soy sauce, adjusting the amount to your taste. Transfer the noodles and beef mixture into bowls using tongs for easy serving. Drizzle with a little sesame oil and garnish with shredded red chilli if desired.

Notes

  • For extra heat, keep some chilli flakes on the side to sprinkle.
  • You can substitute sugar snap peas with mangetout without altering flavor much.
  • Use lean minced beef to keep the dish lower in fat.
