Ingredients

Scale

Main Ingredients

  • 1 tablespoon olive oil
  • ½ medium onion, finely chopped
  • 1 large carrot, finely chopped
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • 1 pound lean ground beef (85% lean)
  • 2 tablespoons tomato paste
  • 1 (28 ounce) can petite diced tomatoes
  • 4 cups beef broth
  • 2 large Russet potatoes, peeled and diced
  • ¼ teaspoon Italian seasoning
  • 1 teaspoon kosher salt, divided

Instructions

  1. Sauté Vegetables: Heat a large heavy bottomed soup pot over medium heat. Add olive oil, chopped onion, carrot, and celery. Season with ¼ teaspoon of salt and cook over medium-high heat for 5-7 minutes until the vegetables are softened and fragrant.
  2. Brown the Beef: Increase heat to medium-high. Add minced garlic, ground beef, and remaining ½ teaspoon salt. Cook for 3-5 minutes, stirring occasionally, until the beef is browned. Drain excess fat if desired or blot with a paper towel to reduce grease.
  3. Add Tomato Paste and Liquids: Stir in the tomato paste and cook for 1 minute to develop its flavor. Then add diced tomatoes, beef broth, diced potatoes, Italian seasoning, and additional salt to taste. Stir well to combine all ingredients.
  4. Simmer the Soup: Bring the soup to a boil by turning the heat to high. Once boiling, reduce heat to medium-low and let the soup simmer gently for 15-20 minutes. Check that the potatoes are tender before proceeding.
  5. Serve: Once the potatoes are cooked through, turn off the heat. Serve the soup hot, optionally topped with a dollop of sour cream for added creaminess and flavor. Enjoy your hearty homemade hamburger soup!

Notes

  • Use lean ground beef to reduce fat content.
  • Feel free to add other vegetables like corn or green beans for extra nutrition.
  • Adjust salt level to taste, especially if using salted beef broth.
  • For a thicker soup, mash some potatoes in the pot before serving.
  • Leftovers can be refrigerated for up to 3 days or frozen for longer storage.
