- 1 teaspoon Ground Black Pepper
- 1/2 tablespoon Onion Powder
Coating
- 1 cup All-Purpose Flour
- 1 cup Breadcrumbs

- 1 pound Lettuce, washed and dried
Instructions
- Boil the eggs: Place 4 of the free-range eggs in boiling water and cook for 6-8 minutes until hard-boiled. Immediately transfer the eggs to ice water and let them cool for 5 minutes. Peel the eggs carefully and set aside.
- Prepare the meat mixture: In a mixing bowl, combine the ground beef with fresh chives, chopped fresh cilantro, paprika, garlic powder, onion powder, and ground black pepper. Mix thoroughly to ensure all ingredients are well incorporated.
- Scramble the egg: Beat the remaining 1 free-range egg in a small bowl and set aside; this will be used for coating.
- Assemble the Scotch eggs: Lightly coat each peeled hard-boiled egg with all-purpose flour. Then take a handful of the meat mixture and flatten it in your palm. Place the floured egg in the center and carefully mold the meat mixture around the egg, forming a tight, round ball.
- Coat the meat-wrapped eggs: Roll the meat ball first in flour, then dip it into the beaten egg mixture, and finally coat it evenly with breadcrumbs to create a crispy exterior.
- Deep fry the Scotch eggs: Heat oil to 360°F (182°C) in a deep fryer or heavy-bottomed pot. Carefully lower the coated Scotch eggs into the hot oil and deep fry for about 10 minutes until golden brown and cooked through.
- Serve: Remove the Scotch eggs with a slotted spoon and drain excess oil on paper towels. Serve hot on a bed of fresh lettuce.
