Hot Honey
- 50ml honey
- 1 small jalapeño, deseeded (if desired) and finely chopped
- ½ tsp apple cider vinegar
- ¼ tsp smoked paprika
Burger and Coatings
- 4 burger buns, halved
- 1 tbsp sesame seeds
- 3 tbsp panko breadcrumbs
- 250g block halloumi, cut into 8 thick slices
- 50g garlic mayonnaise
- 4 tbsp sunflower oil, divided
Charred Pineapple Salsa
- ½ whole pineapple, peeled, cored, and cut into 6 spears
- 2 spring onions, finely sliced
- Small handful coriander, finely chopped
- 1 lime, juiced
- 1 tsp mild chilli powder
- Small handful of parsley, finely chopped
- 1–2 tbsp apple cider vinegar
Slaw
- ¼ red cabbage, thinly sliced
- 1 large carrot, grated or cut into thin matchsticks
- 2 shallots, thinly sliced
- 10 radishes, grated or cut into thin matchsticks
Instructions
- Make the hot honey: Place the honey and chopped jalapeño in a small pan over medium heat. Cook for 3-4 minutes, stirring occasionally, until the honey thins and absorbs the jalapeño flavor. Stir in the apple cider vinegar and smoked paprika, then remove from heat and let cool slightly.
- Prepare the pineapple salsa: Heat a griddle or frying pan over medium-high heat. Brush pineapple spears with sunflower oil and cook for 4-6 minutes on each side until charred. Remove from heat and let cool slightly, then chop into small cubes. Combine chopped pineapple with spring onions, coriander, lime juice, mild chili powder, parsley, and apple cider vinegar. Season to taste.
- Make the slaw: In a bowl, combine sliced red cabbage, grated carrot, sliced shallots, and radishes. Season well and add extra apple cider vinegar if needed to brighten the flavors.
- Toast the buns: Heat 2 tablespoons of sunflower oil in a frying pan over medium heat. Place burger buns cut-side down and toast for 2-3 minutes until golden. Remove and set aside.
- Coat the halloumi: Mix sesame seeds and panko breadcrumbs on a plate. Coat each halloumi slice on both sides with this mixture and set aside.
- Fry the halloumi: Heat remaining sunflower oil in the frying pan over medium heat. Fry the coated halloumi slices for 3-4 minutes on each side until golden and crisp.
- Assemble the burgers: Spread garlic mayonnaise on the base of each bun. Layer with slaw, two halloumi slices, a drizzle of hot honey, and a spoonful of pineapple salsa. Top with the bun halves and serve immediately.
Notes
- For a spicier version, keep the jalapeño seeds and add extra chili powder to the salsa.
- Halloumi fries best when cooked in sunflower oil or any neutral oil with a high smoke point.
- You can prepare the hot honey and salsa a few hours ahead to allow flavors to meld.
- Serve with a side of sweet potato fries or a fresh green salad for a complete meal.
