  • 1 tbsp all-purpose seasoning (such as Dunn’s River)
  • 6-8 cheese slices, chopped
  • 2 large pickles, finely chopped
  • 4 brioche burger buns
  • 3 tbsp vegetable oil
  • 1 large tomato, sliced
  • Lettuce leaves
  • Ketchup and mayo, to serve
  • French fries, to serve

Instructions

  1. Step 1: In a large bowl, combine the beef mince with the all-purpose seasoning. Season with salt and pepper, then mix thoroughly using your hands. Divide the mixture and shape into 4 large, very flat patties and 4 smaller patties.
  2. Step 2: Take one large patty and place some chopped cheese and pickle in the center. Cover this with a smaller patty. Carefully fold the edges of the larger patty around the smaller one to seal the cheese and pickle inside. Repeat to make 4 stuffed burgers total.
  3. Step 3: Heat a large frying pan over medium heat. Toast the brioche buns, cut side down, for 2-3 minutes until golden, then set aside.
  4. Step 4: Pour half the vegetable oil into the pan. Once hot and shimmering, fry two stuffed patties at a time for 3-4 minutes each side. Press gently as they cook to develop a nice crust. The cheese inside should melt, and the patties cook to medium. Repeat with the remaining oil and patties.
  5. Step 5: Allow the burgers to rest for 5 minutes before assembling. Fill the toasted buns with the patties, tomato slices, lettuce, ketchup, and mayo. Serve immediately with French fries on the side.
