Juicy Lucy burgers are a delightful twist on the classic cheeseburger, featuring ground beef patties stuffed with melted cheese and tangy pickles. These burgers are cooked to a perfect medium with a crispy crust, served in toasted brioche buns with fresh tomato, lettuce, ketchup, and mayo. Beef Patties
- 500g Morrisons Market Street 15% fat beef mince
- 1 tbsp all-purpose seasoning (Dunn’s River recommended)
- Salt and black pepper, to taste
- 6–8 cheese slices, chopped
- 2 large pickles, finely chopped
Burger Assembly
- 4 brioche burger buns
- 1 large tomato, sliced
- Lettuce leaves
- Ketchup, to serve
- Mayonnaise, to serve

- 3 tbsp vegetable oil
- French fries, to serve
Instructions
- Prepare the beef mixture: In a large bowl, combine the beef mince with the all-purpose seasoning. Season with salt and black pepper. Mix thoroughly using your hands to evenly distribute the seasoning.
- Form patties: Shape the mixture into 4 large, very flat patties and 4 slightly smaller patties.
- Stuff the patties: Take a larger patty, place a portion of chopped cheese and finely chopped pickles in the center. Place a smaller patty on top. Fold the edges of the larger patty up and over the smaller one, sealing the cheese and pickle inside to create four stuffed burgers.
- Toast the buns: Heat a large frying pan over medium heat. Toast the cut sides of the brioche buns for 2-3 minutes until golden brown. Remove and set aside.
- Cook the patties: Pour half of the vegetable oil into the hot pan. Once shimmering, fry two stuffed patties at a time for 3-4 minutes per side. Press down gently to encourage even cooking. The burgers should cook to medium, develop a nice crust, and have melted cheese inside. Repeat with remaining oil and patties.
- Rest the burgers: Remove the patties from the pan and let them rest for 5 minutes. This also allows the cheese inside to cool slightly as it will be very hot initially.
- Assemble the burgers: Place the rested patties into the toasted brioche buns. Add sliced tomato, lettuce leaves, ketchup, and mayonnaise as desired.
- Serve: Serve the Juicy Lucy burgers hot with French fries on the side for a comforting and indulgent meal.
