Description

A delicious and nutritious Kale & Goat’s Cheese Frittata featuring caramelised red onions and tender kale, cooked gently on the stovetop before finishing in the oven to achieve a perfectly set, golden brown egg base topped with bubbling goat’s cheese.

Vegetables and Cheese

  • 2 red onions, thinly sliced
  • 200g chopped curly kale
  • 100g firm goat’s cheese, broken into chunks

Other Ingredients

  • 1 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 8 large eggs, lightly beaten with a little seasoning (salt and pepper)
  • 1 tbsp water

Instructions

  1. Preheat Oven: Heat your oven to 190C (170C fan) or gas mark 5 to prepare for finishing the frittata in the oven.
  2. Caramelise Onions: Heat 1 tablespoon of olive oil in a 25cm ovenproof frying pan over medium heat. Add the thinly sliced red onions and cook for 10-15 minutes, stirring occasionally, until they are soft and caramelised, bringing out their natural sweetness.
  3. Cook Kale: Add the chopped curly kale along with 1 tablespoon of water to the pan with the onions. Cook for about 5 minutes, stirring gently, until the kale has wilted and softened.
  4. Add Balsamic Vinegar: Pour in 2 tablespoons of balsamic vinegar and let it bubble gently for 1 minute, allowing the flavors to meld and deglazing the pan slightly.
  5. Start Cooking Eggs: Pour the lightly beaten eggs seasoned with salt and pepper over the kale and onions. Stir everything together quickly to combine, then leave the mixture undisturbed over low to medium heat for 5 minutes until the egg is almost set and the bottom is starting to turn golden brown.
  6. Add Goat’s Cheese: Scatter the chunks of firm goat’s cheese evenly over the top of the frittata, spreading the flavor across the surface.
  7. Oven Finish: Transfer the frying pan to the preheated oven and cook for 10-15 minutes until the goat’s cheese is bubbling and the frittata is completely set in the center, ensuring a creamy yet firm texture.

Notes

  • Use an ovenproof frying pan to easily transfer from stovetop to oven.
  • Season the eggs with salt and pepper for best taste.
  • Be careful not to overcook the frittata on the stovetop; it should be just nearly set before going into the oven.
  • You can substitute goat’s cheese with feta or ricotta if preferred.
  • Leftovers can be refrigerated and enjoyed cold or reheated gently.
