  • 2 ½ oz arugula or mixed baby greens

  • 2 tsp everything but the bagel seasoning
  • ¼ lemon (cut into wedges for serving)

Lemon Dill Dressing

  • 2 tbsp dill (roughly chopped)
  • ¼ cup extra virgin olive oil
  • ½ tsp dijon mustard
  • ¼ lemon (juiced)
  • 1 tbsp dill (finely chopped)
  • Sea salt to taste

Instructions

  1. Soft-boil eggs: Bring a medium pot of water to a boil, then reduce heat to a simmer. Carefully add the eggs one by one using a slotted spoon. Increase heat to medium-low and simmer the eggs for about 6 ½ minutes, gently moving them around after 3 minutes to keep yolks centered. Transfer the eggs to a bowl of cold water to cool, then peel once cool to the touch.
  2. Prepare Lemon Dill Dressing: Finely chop the dill and add it to a small mason jar with extra virgin olive oil, dijon mustard, lemon juice, finely chopped dill, and sea salt. Shake well until combined and set aside.
  3. Assemble the Salad: Divide the arugula or mixed greens between two bowls. Drizzle the dressing and toss to coat evenly. Add smoked salmon, sliced avocado, and cherry tomatoes to each bowl. Sprinkle the avocado slices with salt and a squeeze of lemon juice.
  4. Add Eggs and Final Seasoning: Peel and halve the soft-boiled eggs, placing them on top of the salad. Season the eggs with salt and sprinkle fresh dill over the salad. Finish with a generous sprinkle of everything but the bagel seasoning. Serve immediately with lemon wedges on the side for extra zest.
