Description

A refreshing and flavorful appetizer featuring marinated cherry tomatoes infused with a blend of olive oil, vinegars, honey, and fresh herbs, paired perfectly with creamy burrata cheese. Served with grilled bread or crackers, this dish is a delightful balance of tangy, sweet, and savory flavors, ideal for entertaining or a light snack.

Ingredients

Scale

Marinade

  • 1/2 cup extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons champagne or apple cider vinegar
  • 2 teaspoons honey
  • 12 cloves garlic, grated
  • 1/2 cup fresh basil, chopped
  • 2 tablespoons chopped fresh thyme
  • Kosher salt to taste
  • Black pepper to taste
  • Chili flakes to taste

Other Ingredients

  • 3 cups cherry tomatoes, halved
  • 23 balls burrata cheese, at room temperature
  • Grilled bread or crackers, for serving

Instructions

  1. Prepare the marinade: In a bowl, whisk together the extra virgin olive oil, balsamic vinegar, champagne or apple cider vinegar, honey, grated garlic, chopped basil, and chopped thyme. Season the mixture well with kosher salt, black pepper, and chili flakes according to your taste preferences.
  2. Marinate the tomatoes: Add the halved cherry tomatoes to the marinade bowl and toss gently to coat them evenly. Allow the tomatoes to marinate for at least 30 minutes at room temperature, or for a deeper flavor, refrigerate overnight. Before serving, bring the tomatoes back to room temperature.
  3. Assemble and serve: Carefully break the burrata balls over a serving dish or bowl. Arrange the marinated cherry tomatoes around the burrata. Serve immediately alongside grilled or toasted bread or crackers, allowing guests to scoop the creamy burrata and tangy tomatoes onto their bread for a delicious bite.

Notes

  • Marinate the tomatoes for longer if you prefer a more intense flavor; they can be refrigerated for up to 24 hours.
  • Use fresh, ripe cherry tomatoes for the best sweetness and texture.
  • You can substitute fresh thyme with oregano or rosemary if desired.
  • Serve with crusty artisan bread or crisp crackers for added texture.
  • Adjust the amount of honey and chili flakes depending on your preferred balance of sweetness and heat.
