Instructions

  1. Step 1: Finely grind the desiccated coconut with 60g icing sugar using a coffee grinder or food processor until well combined.
  2. Step 2: In a separate bowl, mix the plain flour and matcha powder together, then add this to the coconut mixture.
  3. Step 3: Add the chopped cold butter, egg yolk, lime zest, lime juice, and a pinch of salt. Quickly knead everything together to form a smooth dough.
  4. Step 4: Wrap the dough in cling film and chill in the fridge for at least 30 minutes to firm up.
  5. Step 5: Preheat the oven to 160°C (140°C fan)/ gas mark 3. Lightly flour your work surface, then roll out the dough to about 5mm thickness.
  6. Step 6: Use the tree-shaped biscuit cutter to press out shapes and place them on baking sheets lined with baking parchment.
  7. Step 7: Bake for 10–15 minutes. The biscuits should remain pale to keep their bright green color and not brown much.
  8. Step 8: Remove from oven and allow the biscuits to cool completely on a wire rack.
  9. Step 9: To make the icing, gradually stir the icing sugar with milk in a small bowl until smooth. Add green food colouring if desired.
