- Boil vegetables: Place 500g of new potatoes in a large pan and boil for about 10-12 minutes. Add the broccoli florets in the last 4 minutes of boiling, so both potatoes and broccoli become tender. Drain them thoroughly once cooked.
- Cook salmon: Meanwhile, put the salmon fillets into a microwave-safe dish, add a splash of water, cover with cling film, and microwave on high for 2½ minutes, until the fish is cooked through and flakes easily.
- Prepare pan and potatoes: Heat the grill to ready. Add 1 tbsp olive oil to a deep frying pan over a medium-high heat. Slice the boiled new potatoes into chunky pieces and fry them quickly in the hot oil until the edges are golden and crisp.
- Combine salmon, broccoli, and potatoes: Flake the cooked salmon into large chunks and mix gently with the potatoes and broccoli in the pan.
- Mix eggs and mint: Stir the finely chopped mint and some seasoning into the beaten eggs, then pour the mixture evenly over the ingredients in the frying pan.
- Cook frittata on stovetop: Reduce the heat to low and cook the frittata for about 6 minutes, until the sides are set and the center is still slightly wobbly.
- Finish under grill: Transfer the frying pan under the preheated grill briefly to fully set and brown the top of the frittata.
- Serve: Slice the frittata into wedges and serve warm, ideally with a fresh green salad for a complete meal.
