  • cm piece ginger, roughly chopped
  • 2 garlic cloves, roughly chopped
  • Handful of fresh coriander
  • 2 tsp ground coriander
  • 2 tsp ground cumin
  • 1 tsp cinnamon
  • 75 g ready-to-eat dried apricots, roughly chopped
  • 500 g lean lamb mince
  • Salt and freshly ground black pepper, to season

  • Mayonnaise

Instructions

  1. Prepare the aromatics: Place the onion, ginger, garlic, and fresh coriander in a food processor and blend until finely chopped, creating a fragrant base for the burgers.
  2. Add spices and lamb: Add the ground coriander, ground cumin, cinnamon, roughly chopped dried apricots, lean lamb mince, and salt and pepper to the food processor. Pulse and blend the mixture until it becomes slightly chunky but well combined, ensuring a good texture for the patties.
  3. Shape the patties: Divide the lamb mixture into six even portions and shape them gently into burger patties, taking care not to overwork the mixture to keep them tender.
  4. Cook the burgers: Preheat a grill to medium-high heat. Place the patties under the grill and cook for 4-5 minutes on each side, or until the lamb is cooked through and the burgers are nicely browned on the outside.
  5. Assemble the burgers: Lightly toast the wholemeal rolls, then layer with lettuce, sliced tomatoes, sliced red onions, and the lamb patties. Add a generous dollop of mayonnaise before topping with the roll lid. Serve immediately for best flavor and texture.
