Dressing and Tomato Mix
- 2 tbsp extra virgin olive oil
- 1 tbsp honey
- 1 tbsp sherry vinegar
- 10g chives, finely chopped
- 1 red chilli, finely chopped
- 2 garlic cloves, 1 grated and 1 whole
- 250g tomatoes, a mix of colours and sizes, cut in half
Bread and Cheese
- 2–3 slices of sourdough bread
- 240g ball of mozzarella
Instructions
- Prepare the dressing: In a medium bowl, whisk together the extra virgin olive oil, honey, sherry vinegar, finely chopped chives, finely chopped red chilli, and the grated garlic clove until well combined to form a flavorful dressing.
- Marinate tomatoes: Add the halved tomatoes to the bowl with the dressing and gently stir to coat them evenly. Season the mixture generously with salt and freshly ground black pepper. Cover the bowl and let it sit at room temperature for 1 hour to allow the flavors to meld.
- Toast and garlic rub: Toast the sourdough bread slices until golden and crisp. Immediately after toasting, rub each slice with the whole garlic clove to impart a subtle garlic aroma and flavor into the toasted bread.
- Assemble the dish: Arrange the garlic-rubbed toast slices on serving plates. Tear the mozzarella ball into bite-sized pieces and scatter them evenly over the toast. Spoon the marinated spicy tomatoes with their dressing generously on top of the mozzarella and toast.
