  • Author: Luna
  • Total Time: 25 minutes
  • Yield: 2 servings 1x

Description

A quick and flavorful stir-fried noodle dish featuring tender turkey mince, crisp green beans, and a sticky hoisin sauce with a zesty lime and chili kick. Perfect for a nutritious and satisfying weeknight meal.

Ingredients

Scale

Main Ingredients

  • 100g ramen noodles
  • 100g green beans, halved
  • 3 tbsp hoisin sauce
  • juice of 1 lime
  • 1 tbsp chilli sauce
  • 1 tbsp vegetable oil
  • 250g turkey mince
  • 2 garlic cloves, chopped
  • 6 spring onions, sliced diagonally

Instructions

  1. Cook the noodles and green beans: Boil the ramen noodles according to the package instructions, adding the halved green beans for the last 2 minutes of cooking. Drain the noodles and beans thoroughly and set aside.
  2. Prepare the hoisin sauce mixture: In a small bowl, combine the hoisin sauce, fresh lime juice, and chilli sauce. Mix well and set aside.
  3. Cook the turkey mince: Heat the vegetable oil in a wok or large frying pan over medium-high heat. Add the turkey mince and fry until it is nicely browned and cooked through, breaking it up as it cooks.
  4. Add garlic and sauce: Stir in the chopped garlic and cook for an additional 1 minute to release its aroma. Pour in the hoisin-lime-chilli sauce mixture, stirring well to coat the meat, and cook for a few more minutes until the sauce becomes sticky.
  5. Combine noodles and vegetables: Add the drained noodles and green beans to the pan along with half of the sliced spring onions. Toss everything together gently and heat through to blend the flavors evenly.
  6. Serve: Transfer to plates or bowls and garnish with the remaining spring onions for a fresh, crunchy finish. Serve immediately while hot.

Notes

  • Using fresh lime juice balances the sweetness of hoisin sauce with a tangy freshness.
  • You can substitute turkey mince with chicken or pork mince if preferred.
  • For extra heat, increase the chilli sauce or add fresh sliced chilies.
  • Make sure not to overcook the green beans to keep their crunch and bright color.
  • Leftover hoisin sauce can be used in other recipes like grilled aubergines or chicken wraps.
