Description

This One-Pan Creamy Tuscan Gnocchi recipe delivers a rich and comforting dish bursting with flavors of sun-dried tomatoes, garlic, fresh spinach, and parmesan cheese. Ready in just 15 minutes, it’s a perfect quick meal featuring tender potato gnocchi simmered in a luscious creamy sauce infused with savory herbs and tangy sun-dried tomato oil.

Ingredients

Scale

Main Ingredients

  • 2 tablespoons sun-dried tomato oil
  • ¼ cup sun-dried tomatoes, roughly chopped
  • 4 cloves garlic, minced
  • 1 pound potato gnocchi (uncooked, dry packaged)
  • ¼ cup chicken broth (or vegetable stock)
  • 1 cup heavy cream (or half and half)
  • ½ teaspoon kosher salt
  • 4 ounces fresh baby spinach
  • ½ cup freshly grated parmesan cheese
  • 2 tablespoons fresh basil, finely chopped

Instructions

  1. Sauté Aromatics: In a medium skillet, heat the sun-dried tomato oil over medium heat. Add the chopped sun-dried tomatoes and minced garlic, sautéing for about 1 minute until fragrant.
  2. Cook Gnocchi: Add the dry potato gnocchi to the pan and allow them to sear with the garlic and sun-dried tomatoes for 1 minute, helping to develop flavor and a slight crust.
  3. Add Liquids & Simmer: Pour in the chicken broth and heavy cream, then season with kosher salt. Stir to combine and cook for 5 minutes, allowing the sauce to thicken and the gnocchi to cook through.
  4. Wilt Spinach: Stir in the fresh baby spinach and cook on low heat for an additional minute until the spinach is wilted and tender.
  5. Finish & Serve: Remove the pan from heat. Sprinkle in the freshly grated parmesan cheese and chopped basil, stirring gently to combine. Serve immediately while warm.

Notes

  • You can substitute chicken broth with vegetable stock to make it vegetarian-friendly.
  • Using half and half instead of heavy cream will lighten the dish but still keep it creamy.
  • Freshly grated parmesan is key for the best flavor and texture.
  • Gnocchi can stick if not stirred gently during cooking; take care when stirring.
  • For a dairy-free version, replace cream and parmesan with suitable alternatives.
