  • Author: Luna
  • Total Time: 25 minutes
  • Yield: 1 serving 1x

Description

This One-Pot Cheesy Ramen recipe transforms simple Maruchan Chicken Flavor Ramen into a comforting, flavorful dish with the addition of grilled Spam, sweet corn, fresh spinach, melted American cheese, and garnishes like scallions, fried shallots, and pickled jalapeños. Quick to prepare and satisfying, it offers a delightful twist on instant ramen with creamy, cheesy richness and fresh vegetable textures.

Ingredients

Scale

Ramen and Broth

  • 1 package Maruchan® Chicken Flavor Ramen Noodle Soup
  • Water (as needed, per ramen packet directions)
  • 3 American Cheese Slices

Protein and Vegetables

  • 2.5 ounce Spam
  • 2 ounce Canned Sweet Corn, drained
  • 3 ounce Fresh Spinach

Garnishes

  • 1 bunch Scallion, chopped
  • 1 tablespoon Fried Shallots
  • 2 tablespoon Pickled Jalapeño Pepper (optional)
  • Ice (as needed for blanching spinach)

Instructions

  1. Prepare Vegetables: Open the canned sweet corn and drain the liquid. Wash the fresh spinach thoroughly to remove any dirt.
  2. Slice Spam: Open the can of Spam and slice off a thick 2cm-wide piece or more as desired.
  3. Blanch Spinach: Prepare a pot of boiling water and a bowl filled with ice and water for blanching. Once boiling, submerge the spinach for 30 seconds, then quickly transfer it into the ice water to halt cooking and preserve color.
  4. Loosen Noodles: Place ramen noodles into the boiling water for up to 30 seconds until they begin to loosen. Remove and set aside; the noodles will finish cooking later in the soup.
  5. Grill Spam: Heat a grill pan over medium-high heat. Once hot, grill the Spam slices for 3 minutes on each side until crispy and browned. Alternatively, bake in a preheated oven at 400°F (200°C) for 6 minutes.
  6. Prepare Soup Broth: Refill the pot with fresh water according to the ramen packet directions and bring to a boil. Add the soup base from the ramen packet and stir until dissolved. Rehydrate any other ingredients included in the packet.
  7. Add Ingredients to Soup: Add the previously loosened noodles, blanched spinach, and drained corn to the boiling soup broth.
  8. Melt Cheese: Push the noodles down slightly in the pot, then place the three American cheese slices over the noodles. Turn off the heat and cover the pot to allow the cheese to melt with residual heat and finish cooking the noodles.
  9. Garnish and Serve: Serve the ramen immediately topped with chopped scallions, fried shallots, and pickled jalapeño peppers if using. Serve the grilled Spam on the side to keep it crispy.

Notes

  • You can adjust the amount of Spam or cheese based on personal preference.
  • Blanching the spinach helps retain its vibrant color and texture in the soup.
  • Using American cheese adds a creamy richness but other melting cheeses can be substituted.
  • The grilling step enhances the flavor and texture of Spam but baking is an easy alternative.
  • Pickled jalapeños add a spicy tang and can be omitted for milder taste.
