Tomato Sauce
- 6 tbsp tomato purée
- 1 tbsp tomato ketchup
- 1 tsp dried oregano
- 1 tbsp water

Instructions
- Preheat the oven: Heat your oven to 200°C (180°C fan) or gas mark 6 to ensure it is hot and ready for baking the puff pastry pizzas.
- Prepare the pastry: Unroll the puff pastry sheet and cut it into six equal squares. Arrange the squares on two baking trays lined with baking parchment for easy clean-up and to prevent sticking.
- Score the borders: Using a cutlery knife, carefully score a 1cm border around the edge of each pastry square. This will help the edges puff up nicely during baking.
- Par-bake the pastry: Place the trays in the oven and bake the pastry squares for 15 minutes until puffed up but not fully cooked through—this creates a hollow border for your toppings.
- Make the tomato sauce: While the pastry bakes, mix together the tomato purée, tomato ketchup, dried oregano, and 1 tablespoon of water to create a smooth sauce. Set aside.
- Prepare toppings: Grate the cheese and chop your choice of vegetables and herbs such as sweetcorn, olives, peppers, red onion, cherry tomatoes, spinach, and basil into small pieces for even distribution on the pizzas.
- Add sauce and toppings: Remove the partially baked pastry from the oven and gently press down the centers of each square with the back of a spoon to create a surface for the toppings. Spread the tomato sauce evenly within the puffed borders, then sprinkle grated cheese over the sauce.
- Top and bake again: Add your prepared vegetables and herbs as desired, then return the trays to the oven. Bake for a further 5-8 minutes until the cheese melts and the toppings are warmed through.
- Serve: Remove from the oven and let cool slightly before serving these crispy, cheesy puff pastry pizzas hot.
