Herb Oil Mixture

  • 3 rosemary sprigs, leaves picked
  • 3 thyme sprigs, leaves picked
  • 2 tsp garlic granules
  • 4 tbsp vegetable oil
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Boil the Potatoes: Place the small potatoes into a pan of cold, salted water. Bring to a boil over medium-high heat, then cook for 9-10 minutes or until a knife easily pierces through the center, indicating they are tender. Drain the potatoes well and leave them to steam dry in a colander for a few minutes to remove excess moisture.
  2. Prepare the Herb Oil: Finely chop the rosemary and thyme leaves and combine them in a small bowl with the garlic granules. Drizzle in the vegetable oil and season generously with salt and freshly ground black pepper. Mix well to create a fragrant herb-infused oil.
  3. Preheat the Air Fryer: Set your air fryer to 200°C (392°F) to warm up while preparing the potatoes.
  4. Smash the Potatoes: Transfer the boiled potatoes onto a baking tray. Using the bottom of a glass or ramekin, gently press each potato down until flattened but still holding together. Be careful not to press too hard to avoid breaking them apart.
  5. Coat with Herb Oil: Drizzle the herb oil mixture over the smashed potatoes. Use a pastry brush to evenly coat each potato with the herb-infused oil, ensuring maximum flavor and crispiness.
  6. Air Fry the Potatoes: Place the coated potatoes in a single layer inside the preheated air fryer basket. Depending on the size of your air fryer, you may need to cook them in batches. Cook for 15-20 minutes, turning the potatoes halfway through, until they are crisp and golden brown on the outside.
  7. Serve: Remove the crispy rosemary and thyme smashed potatoes from the air fryer and serve immediately as a delicious side dish.
