Instructions
- Preheat and prepare phyllo: Preheat your oven to 400°F (200°C). If your phyllo dough is frozen, allow it about 30 minutes to come to room temperature. Lightly grease a pie pan with butter or oil to prevent sticking.
- Layer phyllo sheets: Brush one side of each phyllo sheet with melted butter and lay them buttered side up in the pie pan. Overlap the sheets slightly so they cover the bottom and sides of the pan, leaving some extra dough hanging over the edges. This layering creates a flaky, buttery crust.
- Make cheese filling: In a food processor, combine feta cheese, ricotta cheese, garlic, salt, and ground black pepper. Process until the mixture is smooth and creamy, ensuring the garlic is finely blended for even flavor.
- Prepare vegetables and apple slices: Peel the beets, sweet potato, white potato, and apples. Thinly slice all the vegetables and apples uniformly to ensure even cooking and a pleasing presentation.
- Assemble the tart: Spoon the creamy cheese mixture into the prepared phyllo shell and gently spread it evenly. Arrange the sliced vegetables and apples on top, either neatly in rows for a beautiful look or mixed for a rustic feel.
- Add finishing touch and bake: Crumble any leftover phyllo dough on top to form a textured crust. Sprinkle fresh rosemary and thyme evenly over the tart. Bake in the preheated oven for 30 to 45 minutes until the crust is golden brown and the vegetables are tender.
