Dry Ingredients
- 100g jumbo oats
- 40g pumpkin seeds
- 30g mixed sesame seeds (black and white)
- 50g cashew nuts
- 1 tbsp fennel seeds
- 1–2 tsp chilli flakes (depending on heat preference)
Wet Ingredients
- 1 tbsp soy sauce
- 1 tbsp maple syrup
- 1 tbsp olive oil
- 1 egg white
Instructions
- Preheat Oven: Heat the oven to 180°C (160°C fan) or gas mark 4 to prepare for baking.
- Combine Ingredients: In a large bowl, mix together the jumbo oats, pumpkin seeds, mixed sesame seeds, cashew nuts, fennel seeds, and chilli flakes. Stir thoroughly to combine all dry ingredients evenly.
- Add Wet Ingredients: Add the soy sauce, maple syrup, olive oil, and egg white to the dry mix. Stir well to ensure every oat, nut, and seed is fully coated in the wet mixture.
- Spread on Baking Sheet: Evenly spread the coated granola mixture across a large baking sheet to allow for uniform baking.
- Bake: Place the baking sheet in the preheated oven and bake for 15-20 minutes. Halfway through baking, shake or stir the mixture to prevent sticking and promote even cooking.
- Cool: After baking, allow the granola to cool completely on the baking sheet. Cooling helps it crisp up to the desired texture.
- Store and Serve: Once cooled, transfer the granola to an airtight jar for storage. Serve it alongside herby dips and fresh crudités as a savory snack or appetizer.
