Ingredients
Scale
Vegetables
- 500g ripe tomatoes, off the vine and quartered or halved
- 1 small onion, chopped
- ½ small carrot, chopped
- ½ celery stick, chopped
Other Ingredients
- 1 tsp tomato purée
- pinch of sugar
- 450ml vegetable stock
Instructions
- Prepare ingredients: Wash and quarter or halve the ripe tomatoes. Chop the small onion, half a small carrot, and half a celery stick into small pieces to ensure even cooking and blending.
- Add to soup maker: Place the tomatoes, chopped onion, carrot, celery, tomato purée, a pinch of sugar, and vegetable stock into the soup maker’s jug. Be sure not to fill beyond the maximum fill line indicated on the soup maker.
- Start the smooth soup cycle: Close the lid securely and select the ‘smooth soup’ function on your soup maker. This cycle will cook and blend the ingredients into a smooth, creamy soup.
- Season and adjust: Once the cycle is complete and your soup is ready, taste and season well with salt. Check the sweetness and add a little more sugar or tomato purée if you prefer a deeper color and richer flavor.
Notes
- Use ripe, fresh tomatoes for best flavor.
- Adjust the seasoning to your taste preference after cooking.
- You can substitute vegetable stock with chicken stock if preferred, but this recipe is vegetarian.
- If you prefer a chunkier texture, consider using the ‘chunky soup’ function if your soup maker has one instead of ‘smooth soup’.
- This soup can be served hot or chilled as a refreshing summer dish.
