Wet Ingredients
- 80g butter
- 30g light brown soft sugar
- 80g caster sugar
- 3 tbsp double cream
- 1 egg yolk
- about 2 tbsp milk
Dry Ingredients
- 180g plain flour, plus extra for dusting
- ½ tsp ground cinnamon
- ¼ tsp ground ginger
- ¼ tsp ground cardamom
- ¼ tsp ground coriander seeds
- ¼ tsp ground cloves
- ¼ tsp freshly grated nutmeg
- ½ tsp bicarbonate of soda
- ½ lemon, zested
- ½ orange, zested

Instructions
- Prepare the dough: Beat the butter with both the light brown soft sugar and caster sugar in a bowl until the mixture is pale and creamy. Then add the double cream, egg yolk, and citrus zests from lemon and orange, mixing until well combined.
- Combine dry ingredients: In a separate bowl, mix the plain flour with all the ground spices (cinnamon, ginger, cardamom, coriander seeds, cloves, nutmeg), bicarbonate of soda, and a pinch of salt to distribute the spices evenly.
- Form the dough: Gradually add the spiced flour mixture to the wet ingredients and bring together with your hands to form a cohesive dough. Wrap the dough in cling film and chill it in the refrigerator for at least 1 hour to firm up.
- Preheat and prepare for shaping: Line a large baking sheet with baking parchment. On a floured surface, roll out the chilled dough to approximately 2mm thickness. Use a round cutter to cut out cookie shapes, then press decorative patterns into each cookie’s top using the base of a glass.
- Coat with almonds: Pour the flaked almonds onto a plate. Brush the underside of each cookie lightly with milk, then press the milk-coated side into the flaked almonds to achieve a good coating. Place the cookies almond side down on the prepared parchment.
- Chill before baking: If the dough softens during shaping, chill the cookies in the fridge for another 30 minutes to help them maintain their shape during baking.
- Bake the cookies: Preheat the oven to 180°C (160°C fan oven, gas mark 4). Bake the cookies for 10-12 minutes, or until golden brown around the edges.
- Cool and store: Remove the cookies from the oven and allow them to cool completely on the baking sheet. Once cooled, they can be stored in an airtight container for up to three days, maintaining their crisp texture and flavor.
