  • 2 tbsp tomato purée
  • 400g can black beans, drained
  • 180g spelt wholemeal flour, plus extra for dusting and sprinkling
  • 2 avocados
  • 1 lime, juiced
  • 4 large iceberg lettuce leaves (about 120g)
  • 198g can sweetcorn, drained
  • 120g pot bio yogurt
  • 15g coriander, finely chopped
  • 12 Kalamata olives, halved

Instructions

  1. Step 1: Heat 1 tbsp rapeseed oil in a non-stick pan over medium heat. Add the finely chopped onions and cook for 10 minutes until soft.
  2. Step 2: Stir in the brown basmati rice, mild chilli powder, ground coriander, and cumin. Add the chopped tomatoes, a can of water, and tomato purée. Cover and simmer for 25 minutes until the rice is cooked.
  3. Step 3: Stir in the drained black beans, remove the lid, bring back to a simmer, and cook for another 5-10 minutes until the rice is tender. Set aside to cool.
  4. Step 4: In a small bowl, combine the spelt wholemeal flour with 2 tsp rapeseed oil and 115ml cold water. Stir with a knife until the dough starts to come together, then knead gently with your hands to form a soft ball. Quarter the dough and cover with a tea towel.
  5. Step 5: Lightly flour your work surface. Roll out one dough ball into a thin circle about 25cm in diameter. Heat a large non-stick frying pan over medium heat without oil. Cook the wrap for about 1 minute on one side, then flip and cook for a few seconds more. Remove and keep warm. Repeat with remaining dough.
  6. Step 6: Roughly mash the avocados with lime juice. Lay the whole iceberg lettuce leaves over each wrap. Spread a layer of the cooled rice mixture, scatter sweetcorn, then top with mashed avocado, yogurt, chopped coriander, and halved olives.
