  • 50ml low-sodium soy sauce
  • 50ml mirin
  • 2 tbsp lemon juice
  • 1½ tbsp caster sugar

  • 200g soba noodles
  • 140g thin-stemmed broccoli
  • 140g cooked prawns
  • 1 small red chilli, thinly sliced

Instructions

  1. Make the Teriyaki Sauce: In a small saucepan, combine the low-sodium soy sauce, mirin, lemon juice, and caster sugar. Heat the mixture over medium heat and let it simmer gently for 5 minutes until it thickens into a syrupy consistency. Once done, remove the pan from the heat and set aside.
  2. Cook the Noodles and Broccoli: Bring a large saucepan of salted water to a rolling boil. Add the soba noodles and thin-stemmed broccoli to the boiling water together and cook for about 3 minutes, or until the noodles are tender and the broccoli is just crisp-tender.
  3. Add the Prawns: Just a few seconds before draining, add the cooked prawns to the boiling water to warm them through without overcooking. Then drain the noodles, broccoli, and prawns thoroughly.
  4. Assemble and Serve: Divide the cooked noodles, broccoli, and prawns between two plates. Pour the warm teriyaki sauce evenly over the top of each serving. Finally, sprinkle with the thinly sliced red chilli for a touch of fresh heat and serve immediately.

Notes

  • You can substitute soba noodles with whole wheat or rice noodles if preferred.
  • Adjust the amount of chili to your heat preference or omit altogether for a milder flavor.
  • Cooked prawns can be swapped with cooked chicken or tofu for variation.
  • Be careful not to overcook the prawns to keep them tender and juicy.
  • Use low-sodium soy sauce to control the salt level in the dish.
