These tasty Tuna Sweetcorn Burgers are a quick and easy meal, combining tuna, sweetcorn, and cheddar into flavorful patties. For the Tuna Sweetcorn Burgers

  • 85g white bread, torn into pieces
  • 198g can sweetcorn, drained
  • 2 x 185g cans tuna in water, drained well
  • 25g grated cheddar
  • 3 spring onions, finely chopped
  • 1 egg, beaten
  • 2 tbsp vegetable oil

Instructions

  1. Prepare the bread crumbs and sweetcorn: Whizz the torn bread pieces in a food processor until they become fine crumbs. Transfer the crumbs into a large mixing bowl. Next, whizz half of the drained sweetcorn in the processor until finely chopped, then add this chopped corn back into the bowl along with the remaining whole sweetcorn.
  2. Mix the burger ingredients: Add the drained tuna, grated cheddar, finely chopped spring onions, and a pinch of seasoning to the bowl with the breadcrumbs and sweetcorn. Mix thoroughly to combine all ingredients evenly.
  3. Add the egg binding: Pour in the beaten egg gradually, mixing continuously. You may not need to use all of it; add just enough until the mixture becomes sticky enough to shape into burgers.
  4. Form the burgers: Divide the mixture into four equal portions and gently shape each into a patty.
  5. Cook the burgers: Heat the vegetable oil in a non-stick frying pan over medium heat. Cook the burgers for about 5 minutes on each side, or until they turn golden brown and are heated through in the center.
  6. Assemble and serve: Place each cooked burger inside a wholegrain bread roll and top with fresh lettuce leaves and a generous dollop of salsa. Serve immediately and enjoy.

Notes

  • For a delicious variation, shape the mixture into 16 small meatballs and fry, turning occasionally, for 8-10 minutes until golden and piping hot. Serve with tomato sauce and spaghetti for a tasty pasta dish.
  • Make sure to drain the tuna and sweetcorn well to avoid watery burgers.
  • You can add extra seasoning like black pepper or herbs according to taste.
  • Use wholemeal or gluten-free rolls to adapt the recipe to dietary preferences.
