Roasted Root Vegetables

  • 3 large carrots, cut into chunky batons
  • 1 large potato, cut into chunky batons
  • ½ celeriac, cut into chunky batons
  • 2 tbsp olive oil, plus extra for brushing
  • Salt and freshly ground black pepper, to season

Turkey Patties

  • 400g turkey mince
  • 2 tbsp chopped basil leaves
  • 1 tsp fennel seed, crushed
  • Olive oil, for brushing
  • Salt and freshly ground black pepper, to season

Parmesan Dressing

  • 2 tbsp finely grated Parmesan
  • 2 tbsp olive oil
  • 2 tsp white wine vinegar
  • 1 tsp Dijon mustard
  • 1 tbsp natural yogurt
  • Salt and freshly ground black pepper, to season

To Serve

  • 110g bag watercress, spinach and rocket salad

Instructions

  1. Preheat and Prepare Vegetables: Heat the oven to 220C (200C fan)/gas mark 7. Place the chopped carrots, potato, and celeriac in a roasting dish. Drizzle over half the olive oil, season with salt and pepper, and toss to coat evenly.
  2. Roast Vegetables: Roast the vegetables in the oven for 45-50 minutes, turning occasionally, until they are tender and golden brown.
  3. Make Turkey Patties: In a bowl, combine the turkey mince with chopped basil and crushed fennel seeds. Season with salt and pepper. Shape the mixture into small patties.
  4. Cook Turkey Patties: Heat a griddle pan over high heat until hot. Brush the patties lightly with olive oil and cook them for 5-6 minutes on each side, or until thoroughly cooked and browned.
  5. Prepare Parmesan Dressing: In a small bowl, whisk together the remaining olive oil, finely grated Parmesan, white wine vinegar, Dijon mustard, natural yogurt, and seasoning to taste until smooth and creamy.
  6. Assemble Salad and Serve: Arrange the mixed salad leaves on plates, top with the roasted vegetables and turkey patties. Drizzle the Parmesan dressing over the top and serve immediately.

Notes

  • You can substitute celeriac with parsnip for a different flavor.
  • For a spicier patty, add a pinch of chili flakes to the turkey mixture.
  • The patties can also be cooked on a stovetop skillet if a griddle pan is unavailable.
  • If you prefer a thicker dressing, increase the Parmesan and yogurt slightly.
