Roasted Root Vegetables
- 3 large carrots, cut into chunky batons
- 1 large potato, cut into chunky batons
- ½ celeriac, cut into chunky batons
- 2 tbsp olive oil, plus extra for brushing
- Salt and freshly ground black pepper, to season
Turkey Patties
- 400g turkey mince
- 2 tbsp chopped basil leaves
- 1 tsp fennel seed, crushed
- Olive oil, for brushing
- Salt and freshly ground black pepper, to season
Parmesan Dressing
- 2 tbsp finely grated Parmesan
- 2 tbsp olive oil
- 2 tsp white wine vinegar
- 1 tsp Dijon mustard
- 1 tbsp natural yogurt
- Salt and freshly ground black pepper, to season
To Serve
- 110g bag watercress, spinach and rocket salad
Instructions
- Preheat and Prepare Vegetables: Heat the oven to 220C (200C fan)/gas mark 7. Place the chopped carrots, potato, and celeriac in a roasting dish. Drizzle over half the olive oil, season with salt and pepper, and toss to coat evenly.
- Roast Vegetables: Roast the vegetables in the oven for 45-50 minutes, turning occasionally, until they are tender and golden brown.
- Make Turkey Patties: In a bowl, combine the turkey mince with chopped basil and crushed fennel seeds. Season with salt and pepper. Shape the mixture into small patties.
- Cook Turkey Patties: Heat a griddle pan over high heat until hot. Brush the patties lightly with olive oil and cook them for 5-6 minutes on each side, or until thoroughly cooked and browned.
- Prepare Parmesan Dressing: In a small bowl, whisk together the remaining olive oil, finely grated Parmesan, white wine vinegar, Dijon mustard, natural yogurt, and seasoning to taste until smooth and creamy.
- Assemble Salad and Serve: Arrange the mixed salad leaves on plates, top with the roasted vegetables and turkey patties. Drizzle the Parmesan dressing over the top and serve immediately.
Notes
- You can substitute celeriac with parsnip for a different flavor.
- For a spicier patty, add a pinch of chili flakes to the turkey mixture.
- The patties can also be cooked on a stovetop skillet if a griddle pan is unavailable.
- If you prefer a thicker dressing, increase the Parmesan and yogurt slightly.
